Coriander Powder
Coriander seeds are small, round, light brown, 3 mm in diameter. They are harvested at maturity by shaking the plant upside down.
The seeds taste slightly sweet and lemony, are used as whole spices in canned vegetables, lemon and olives; they aromatize pickles and other relishes. Ground, they are added to couscous, rice, soup harira (Moroccan soup with lentils, onions and saffron), tagines, sauces, meats and fish, bread, spices and some jams.
For a powder, the seeds to a few minutes in oven or in a non stick skillet and grind in a mortar or grind in blender. They make all their flavor well.
– The ground seeds are used in the composition of curry powder and crushed leaves are added to the paste of green curry.
